High fiber Tex-mex corn and black bean salad

Let this serve as your reminder to eat more beans! The average person doesn't take in nearly enough fiber. This recipe is also iron rich and loaded with micronutrients. I have been making an effort to eat more salads that aren't lettuce heavy. This diverse salad can be eaten alone, on a tortilla with a protein, or simply topped with a protein. The chipotle dressing is what makes this such a treat! And you don't even have to feel guilty about indulging because unlike most dressings this is extremely low calorie and packs a significant amount of protein.
