Pork chops are not the enemy! These lean pork loin chops are one of the most economical ways to get some lean protein in your system and protein feeds hair growth. The cooking method makes all the difference in this recipe. Rather than coating and deep frying these chops I simply seasoned them and cooked them in a cast iron skillet.
Traditional romesco sauce includes olive oil. In order to keep this recipe light we have prepared an oil-free romesco sauce.
Lastly, instead of a heavy pasta we are enjoying this sauce over a bed of zoodles (zucchini noodles).
